the team

derek polay - executive chef

Derek is a State College native, who after graduating high school moved to New York to attend culinary school. He spent six years working in 3 Michelin star Jean-Georges, Michelin bib gourmand Llama Inn, James Beard Award Winner Olmstead and the former number one restaurant in the world, Central in Lima, Peru.

His plan has always been to bring his career full circle back to State College. He and his wife Tati opened an award winning bakery, and he is excited to take the next step in leading the culinary experience at Studebaker House.

michael tedesco - beverage director

Michael’s passion for service and beverage lies in ensuring a unique and memorable experience for all guests. He brings numerous years of both classical and new era libations as well as genuine service. His love of travel has allowed him to create refined cocktails that tell a story.

He is passionate about expressing his creativity through beverages and truly believes that the hospitality industry is all about providing an unforgettable "song and dance"—a tailored event that everyone deserves to enjoy.

dylan peterman - executive sous chef

A fellow State College native, Dylan has over a decade of chasing the chaos and rhythm of restaurant life. His experience spans from small, family owned kitchens where every detail counts to fast-paced, high volume establishments that thrive on teamwork.

After taking a year away to rediscover his passions and creative focus, he has returned with a deeper appreciation for food as both craft and connection. For him, food is a love language - one he hopes to speak fluently through every dish and flavor you experience.

christine wenner - owner, general manager

Born and raised in Huntingdon County, Christine is humbled to bring together a team to offer a different kind of dining experience to the place that shaped her beliefs around food and the importance of meaningful gathering.

Working in hotels and restaurants in New York, Washington, D.C. and small towns throughout Pennsylvania, she knew the most impactful location to share with others would be back home.
